A few questions and clarifications:
The email address the tenants see is based on the user that sends it - and then their address is their email [email protected]?
If they receive emails, there is a little blue dot next to the tenant on the accounting page. Is this the only notification? Just that there are also options for automatic actions to create notifications when receiving an email as well?
They want to be able to sort emails by users (whoever sent the tenant an email). They also did not even want to see the emails that other users sent when they are logged in, they want to only view their own. And then they only wanted notifications for when a tenant is responding to an email that they sent.
Not sure we want to implement this, but is there any workaround we could do to slightly accommodate this?

Yes, that is correct. @hub.propertymatrix.com is appended to the user's alias that is set in User section on the settings page. Admin users also have the option to send their emails from the main company email that is set in the Company Information section on the settings page. Admin users can do this by composing an email and changing the selected option for "From:".
The blue dot is the default notification for incoming emails, but users can also set up automatic actions for personalized notifications. They can forward the emails to another email address or create a notification at the top of their screen. When setting up the automatic action to create a notification, the user can select between notifying all users, the users related to the trigger, or notifying specific users. By default, notifications are set up to notify all users. In this case, the user should set up the notification for users related to the trigger and this will only notify the users related to the email that was received.
